Your Culinary Specialty

We received a lot of positive feedback about the article “The Best Shot of Your Trip” in the last issue of P-Mates. In this issue, we want to follow that up with another article that features photos you sent in.

This time the theme is “Your Culinary Specialty.” We received photos from employees in countries around the world.

Hainanese chicken rice

I love chicken rice!
Several times I tried to cook it at my home in Japan, but it was difficult for me to cook well (I guess freshness of chicken is important, and rice here in Japan is not so good for it.) Your photo makes me hungry!

Shrimp Stir Fry Buri-daikon

My daughter is usually a very picky eater and generally eats only a few types of American food such as pizza, hot dogs and macaroni & cheese.
Surprisingly, she likes my homemade Shrimp Stir Fry made in the wok, especially the vegetables such as water chestnuts, bok choi, snow peas and small ears of corn.

This is a famous Japanese dish called "Buri-daikon," boiled yellowtail and Japanese radish. Yellowtail is one of the most popular fish in Japan. Yellowtails caught in winter have plenty of fat, so I always look forward to the winter season. This is a dish that uses the bony parts of the fish boiled with Japanese radish and flavored with soy sauce. If yellowtail is boiled as is, it's too strong-smelling. Preventing this is where cooks get to show their skill. Another thing that needs to be done before boiling the pieces of Japanese radish is to round the edges of the slices so that the pieces won't get mushy when they are boiled.
